Bean Burgers
Ingredients (serves 8) - 2 points per pattie
- 750g can Edgell Four Bean Mix, drained
- 1 carrot, grated
- ½ cup finely chopped zucchini
- 1 cup finely chopped capsicum
- ¼ cup Birds Eye frozen peas
- ½ cup fresh breadcrumbs
- 1 egg, beaten
- 1 tablespoon barbecue sauce
- 2 tablespoons dry breadcrumbs
- Cooking Spray
Method
- Preheat oven to 200 degrees. Place drained Edgell Four Bean Mix into a food
processor and process until finely chopped, spoon into a large mixing bowl.
- Cook carrot, celery, cabbage, peas, in a small saucepan of boiling water for 2
minutes to soften vegetables. Drain. Add vegetables to bean mix with
breadcrumbs, egg and barbecue sauce mixing well.
- Divide mixture into 8 and shape into burgers, coating lightly in breadcrumbs.
- Place onto a greased oven tray and bake in preheated oven for 20 minutes.
